Picky Eaters Approved: Potato Pie with Beets!






This is very similar to a Shepherd's Pie, only it is "picky eaters approved" and I may have sneaked in some grated beets...who knows? you barely see them when you eat the pie...your picky eater will just savor a juicy and delicious potato pie!

This recipe is very nutritious. Perfect for 6 months old babies and up. Beware, parents are known to devour it as well.

Ingredients

1/2 Tsp olive oil 
1 big onion, diced
1 garlic clove, minced
1/2 cup oats (optional)
1 pound lean ground beef 
1 big or 2 small beets, grated
4 to 5 potatoes, boiled and smashed
Milk (1/2 cup) & butter (2 Tbs) for the potato puree 
4 Tsp grated Parmesan cheese
Salt & pepper to taste

This is how you make it

Preheat oven. Boil potatoes in a large pot covered with salted water. Once they are tender drain and start preparing your puree by smashing the potatoes and adding about 2 Tbs of butter and 1/2 cup of hot milk. 

Heat the oil in another pot or skillet and stir in the onions, garlic and grated beets until tender. This is when you would add the oats, I didn't, but it's an option, especially for smaller babies. Add ground beef and cook until brown. If you see it's still red after 10 minutes it's because beets, onion and garlic together add a red sauce to the ground beef.

Spread ground beef mixture into a previously greased baking dish leaving enough room to add mashed potatoes on top. I made two batches. One went into the freezer!























Spread mashed potatoes over ground beef.

























Add grated Parmesan cheese on top and bake for 20 minutes.





















Cut it into squares and serve. It's so good that, after having it for dinner recently, my kids realized how much they liked beets!

If you don't want to use potatoes you can make puree with carrots or even pumpkin, for an even healthier option.
